If you crave pudding but hate the artificial colors and added sugars this is the ultimate alternative. You can quickly create this at home with just a few staple ingredients. Soaking the chia seeds in liquid is what creates the mouth feel of 'pudding', we use blue spirulina for the beautiful natural color, but you can utilize beet root powder, turmeric, acai powder etc. We use mangos when in season and other fruit throughout the year then top if off with a generous portion of Avinola so you get that amazing crunch with every bite!
Summer Fruit Chia Pudding:
- 4 Tbsp chia seeds
- 1/2 Cup milk of choice
- 1/2 Tsp blue spirulina
- Sweet almond coconut Avinola
- Mango, chopped into small chunks
In two separate bowls, add 2 tbsp of chia seeds and 1/4 cup milk of choice to each. Add the blue spirulina to one bowl and stir again. Let it sit for at least 10 minutes to thicken then stir each bowl again. Layer the two puddings in a glass then top with Avinola and mango chunks.
